All the smoky, fiery soul of classic jerk chicken — grilled lean and big on protein, easy on the carbs.
Ingredients
- 1.5 lb boneless skinless chicken thighs
- 2 scallions, chopped
- 1 scotch bonnet, seeded
- 2 tbsp fresh thyme
- 1 tbsp allspice
- 2 tbsp lime juice
- 1 tbsp low-sodium soy sauce
- 2 cloves garlic
Instructions
- Blend scallions, scotch bonnet, thyme, allspice, lime, soy and garlic into a paste.
- Marinate chicken at least 1 hour (overnight is better).
- Grill over medium-high 6–7 minutes per side until charred and 165°F.
- Rest 5 minutes, then serve with lime wedges.
