All the smoky, fiery soul of classic jerk chicken — grilled lean and big on protein, easy on the carbs.

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 2 scallions, chopped
  • 1 scotch bonnet, seeded
  • 2 tbsp fresh thyme
  • 1 tbsp allspice
  • 2 tbsp lime juice
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic

Instructions

  1. Blend scallions, scotch bonnet, thyme, allspice, lime, soy and garlic into a paste.
  2. Marinate chicken at least 1 hour (overnight is better).
  3. Grill over medium-high 6–7 minutes per side until charred and 165°F.
  4. Rest 5 minutes, then serve with lime wedges.
